The only food I didn't find was Mexican food. I'm sure it's there somewhere but I just didn't seem to see any Mexican restaurants.
I'm not really sure where this belongs so I put it here.
Let's take a shot at this.
My favorite use to be the Blue Parrot on Soi 13/4. It has since closed and supposedly the cook/s moved next door to Sue's Place. I haven't read a report since then.
I have been to Tequila Reef on Soi 7 twice. I didn't like it and won't be going back. But some do like this place. I hear good comments about their ribs on occasion although I don't consider ribs Mexican food. And I don't consider their Mexican food particularly good. YMMV and all that stuff.

Lone Star on Soi Lengkee has some Mexican but I have never tried it.

Mike's Mexican is popular with some. I must confess to never trying the place. I tried to go once but went too far on the baht bus.
In Jomtien there is a Sunrise Tacos location. Reminds me a bit of Taco Bell food. Tacos are OK and the chicken quesadilla is very filling if not terribly authentic. I have only eaten at the Sunrise location in BKK on Sukhumvit.
Sam's Mexican in the Jomtien Complex is owned by an American that use to have a restaurant in Tijuana. I eat there on occasion. Depending on your tastes worth a try.
So there are some places for others to comment on and I'm sure a few can be added. I find most Mexican places to be kind of expensive like many foreign food restaurants.
