It appears that the same girls are in Guess all the time. Do these girls work 7 nights a week?

No - they work 6 days a week which is rare. The standard for girls working in bars is one day off every 14 days. Having said that, they are allowed, if they wish to work the day off.
With 18 girls currently, you find on an average night 2/3 are on a day off. For special events, the day off is moved to ensure a full turnout.
Incidentally, the core staff have remained the same since the opening day - more staff have been added and a couple fall by the wayside normally within 1 week of starting - however the original 6 salary staff (Jenny, Eats, Nat, Jane, Koko, Nan) remain to this day, which must say something about the ambience within the bar as least as far as the girls are concerned. So in a nutshell, this is not a high turnover working environment.
